Superfood Granola- plant based, no added sugar, zero waste
Here’s the recipe for Homemade Superfood Granola that I somehow didn’t burn 🎉.
I made this as a topping for baked pears, but because it’s so delicious & nutritious, we use it for much more! Throw it on yogurt, a banana, or a smoothie for some crunch (always need a crunch for a contrast in textures). It’s also wonderful as a cereal with your favorite milk. It’s plant based, added sugar free, gluten free and filled with protein, healthy fats and fiber.
I didn’t measure because #momlife so below is a rough recipe! (PSA: I highly suggest ditching the need to measure everything when cooking. It’s freeing, takes the edge off prepping and makes for less clean up).
Superfood Granola
Ingredients
Nuts & Seeds of your choice (I used pecans, walnuts, sunflower seeds, hemp seeds)
Dried fruit (I used dates)
Oats
Coconut flakes
Coconut oil
Cinnamon
Directions:
Spread a layer of coconut oil on a baking sheet.
Add crushed nuts/seeds to the pan (you might want to crush them between your hands if using larger nuts like walnuts or pecans), along with dried fruit, oats and coconut flakes directly to the tray.
Sprinkle with nuts and dried fruit with cinnamon and add a bit more coconut oil. Stir it all together on the tray until evenly coated and then spread the mixture out.
Bake in the over @ 350F for about 10 minutes. (Set a timer so you don’t burn it!).
