Banana French Toast

A bundle of overripe bananas were staring at me this morning and I decided to make the most of them. The result? Vegan Banana French Toast. The bananas added enough natural sweetness for me that I didn’t need any maple syrup! Feel free to use any whole grain bread for this recipe. The longer you soak the bread in the mixture, the fluffier the french toast.

Feel free to make a larger batch of these and freeze them! Then, you can pop them into the toaster in the morning for a quick breakfast.

BANANA FRENCH TOAST

Ingredients

  • 3 overripe bananas

  • 2 Tbsp flaxseed meal

  • 1 cup lite coconut milk

  • 1 tsp cinnamon

  • Splash of vanilla extract

  • 3 pieces of Whole Wheat Bread

  • Coconut oil, for cooking

Directions

  1. Mash the bananas in a bowl.

  2. Mix in the flaxseed meal, coconut milk, cinnamon, and vanilla extract into the bowl with the bananas.

  3. Place the bread into the sweet banana mixture and let soak for at least 5 minutes.

  4. Add coconut oil to the pan and let the oil heat up before adding the bread.

  5. Add each piece of bread to the pan and heat for about 10 minutes, until each side is golden brown. The bananas will caramelize and the whole kitchen will smell amazing.

  6. Remove from the heat, take a deep breath, and enjoy!
