3-Ingredient Peanut Butter Brown Rice Crispy Treats- vegan, gluten free, no added sugar

My toddler has discovered cereal…and in my attempt to avoid giving him cereal alone (as opposed to paired with other nutritious foods like nuts/seeds/fruit), I made him these Peanut Butter Brown Rice Crispy Treats. In honor of Valentine’s Day, I used goji berries, but you can use your favorite dried fruit.

When choosing a dried fruit, make sure that the only ingredient is fruit. It’s best to avoid added sugar (FYI: apple juice concentrate = added sugar) and other oils that are often added to dried fruit. My favorite dried fruit is from Sun & Swell (use code Abby.C10 for a free compostable mailer!). And, I love the brown rice crisps from The Real Cereal Company (watch out, their dried fruit has A LOT of added sugar so we get the plain cereal + nuts).

He’s obsessed! As is the rest of my family. These only require a 3 ingredients and 20-30 minutes in the freezer.

Top tip: store them in the freezer because they don’t keep their shape for long. I take them out when ready to enjoy them and I made them in bite size portions.

3 Ingredient Peanut Butter Brown Rice Crispy Treats

Ingredients

  • 1 .5 cups brown rice crispies

  • 1/2 cup dried fruit

  • 2/3 cup peanut butter

Directions

  1. Mix together all ingredients in a bowl until the crispies and dried fruit are coated in peanut butter.

  2. Transfer to a silicone ice mold tray (or a muffin tin greased with a bit of coconut oil).

  3. Place in the freezer for 20-30 minutes until easy to pop out of the mold.

  4. Store in the freezer and enjoy!
