Cashew Cacao Coconut Creamer
The most popular AFC recipe is my 2-ingredient coconut milk coffee creamer. And, for good reason. It takes about a minute to make, only 2 ingredients, and is the BEST coffee creamer on the planet. It gives the perfect amount of creaminess and coconut flavor to coffee without all the additives, preservatives, and sugar in most store bought creamers.
Because of its popularity (and because my second trimester has me craving chocolate in the morning…), it was time to jazz up this AFC classic. Enter the Cashew Cacao Coconut Creamer. It’s just as creamy as the traditional version and has a touch of sweetness from medjool dates.
A note about cacao versus cocoa. Cacao refers to the tropical plant and cacao beans are the main ingredient in chocolate, cocoa, and cocoa butter. Cacao can also refer to a product- cold-pressed non-roasted cacao beans. This process leads to a more nutrient pact product. Cocoa, on the other hand, is a chocolate powder made from roasted cacao beans. Usually cocoa products (i.e., conventional hot chocolate mixes) contain other ingredients as well, including added sugar. As with all ingredients, I recommend opting for the highest quality in the purest form. Therefore, I choose cacao over cocoa.
All other ingredients- cashews, dates, vanilla extract, coconut cream- for this recipe are usually available in the bulk section of the supermarket or in glass/cans. The best unsweetened coconut cream is the Whole Foods 365 brand in a BPA-free can.
To make sure that the creamer is creamy enough, the recipe suggests making the Cashew Cacao Milk first and then adding the coconut cream. You will have some cashew cacao milk left over to enjoy as a sweet treat! (Or, you can make more creamer!)

Cashew Cacao Coconut Creamer
Makes 2 cups of creamer
Ingredients
1 cup cashews
2 tbsp cacao powder
3 pitted medjool dates
1 tsp vanilla extract
Pinch of sea salt
3 cups filtered water
8 tbsp coconut cream
Directions
Place cashew, cacao powder, dates, vanilla extract, and sea salt into the NutraMilk. Press the “Butter” cycle and set for 3 minutes. Press start.
After the 3 minutes, add the water and press mix (use the default time). Press start.
To dispense the Cashew Cacao Milk, press dispense, then press start and open the spigot so the milk flows into your glass bottle.
Pour 2 cups of the Cashew Cacao Milk into a separate glass jar and t
hen add 8 tbsp of coconut cream. Shake to combine the coconut with the milk!
Store in a sealed glass jar in the refrigerator. It gets thicker and creamier when cold.
Add about 2-3 tbsp to your morning coffee!
