Turmeric Egg Salad

For this jar salad, I used my turmeric egg salad as the base and then loaded the rest of the jar up with vegetables. If you’re looking for an extra kick in your egg salad, the turmeric delivers on flavor and nutrition! Turmeric has many anti-inflammatory benefits that support overall health and wellbeing. If you don’t want that turmeric flavor, feel free to leave it out.

TURMERIC EGG SALAD (serves 1)

Ingredients

  • 2 hard boiled eggs

  • 2 Tbsp avocado (or 1-2 Tbsp Primal Kitchen Vegan Avocado Mayo)

  • 1/4 cup red onion, chopped

  • 1/4 tsp turmeric

  • Fresh Ground pepper

  • Pinch of sea salt (optional)

Directions

  1. Mash the hard boiled eggs in a bowl.

  2. Mix in the avocado (or mayo), onions, turmeric, and ground pepper and salt until combined.

    Note: The ground pepper helps absorb turmeric so you reap all of turmeric's anti-inflammatory benefits.

  3. Enjoy on a salad or on your favorite bread or even with some crackers or fresh, crunchy veggies.
