My Go-to Egg Salad
- 2 hard boiled eggs
- 1 Tbsp Mayonnaise (I use Sir Kensington’s Fabainase)
- Chopped basil
- 1/4 chopped red onion (use the scallion greens to make FODMAP friendly)
- Fresh ground pepper
- Mash the hard boiled eggs in a mixing bowl.
- Add all other ingredients into the bowl and mix to combine.
- Serve on top of a bed of greens or in a sandwich.
- Take a deep breath before enjoying!
