My Go-to Egg Salad

Serves 1


  • 2 hard boiled eggs
  • 1 Tbsp Mayonnaise (I use Sir Kensington’s Fabainase)
  • Chopped basil
  • 1/4 chopped red onion (use the scallion greens to make FODMAP friendly)
  • Fresh ground pepper


  1. Mash the hard boiled eggs in a mixing bowl.
  2. Add all other ingredients into the bowl and mix to combine.
  3. Serve on top of a bed of greens or in a sandwich.
  4. Take a deep breath before enjoying!
